Two regional fast casual brands have partnered with MenuTrinfo, a nutritional analysis and training firm. Florida-based My Ceviche and Denver-based Heidi's Brooklyn Deli will leverage MenuTrinfo’s real-time consulting, nutritional analysis, and allergen- and gluten-free menu development, according to a news release.
My Ceviche was founded in 2012 by friends and business partners Roger Duarte and James Beard-nominated chef Sam Gorenstein. The concept features local seafood.
"We pride ourselves on our quality and amazing choices – we just had to communicate that information in a clear manner,” Duarte said in the release. “MenuTrinfo’s knowledge and expertise allowed us to show our customers that we can cater to their most specific needs, all thanks to a fantastic experience with the professional and knowledgeable team at MenuTrinfo."
Earlier this month, the MenuTrinfo team also signed a deal with 20-unit Heidi's Brooklyn Deli. Heidi's was founded 20 years ago in Denver by Heidi Naples and Steve Naples. The restaurants serve East Coast-style deli sandwiches. The concept is rolling out new deli items such as organic cheeses and grass-fed proteins that are nitrate and nitrite-free, antibiotic-free and free of additional hormones.
In additional to nutritional analysis and allergen- and gluten-free menu development, the MenuTrinfo team is working with My Ceviche and Heidi's Brooklyn Deli on nutritional certification, disclaimers and general nutritional content for newsletter, print and website guest communication.
