Modern Market opens store with double-sided kitchen line

Modern Market Eatery, a healthy fast casual restaurant brand, is opening a restaurant in the Denver area, near the intersection of Colfax Avenue and Peoria Street in Aurora. When it opens in Q3, the chain will have 17 locations in Colorado and 29 overall, according to a company press release.

It will feature a double-sided kitchen line, which made its debut in 2020 and will appear in all future locations.

"Colorado's population has grown almost 15% since the brand's fruition in 2009 — with a large portion of population growth in the Denver metro area and Front Range, which have added new territories and communities steadily," CEO Rob McColgan said in the release. "We're constantly working to adapt our menu and further our reach in our home-market communities and beyond to meet the consumer demand for delicious, healthy, affordable and convenient food, and this upcoming location in Denver is a huge part of that."

The chain is seeking franchise partners to help develop the brand in underserved metropolitan areas as well as smaller communities
