Koibito Poke, a four-unit chain based in Arizona, is opening two locations this summer in St. Louis.
"This expansion is a natural fit because of my roots of playing with the St. Louis Cardinals and our relationship with the area developer," co-founder and CEO Todd Stottlemyre, a former MLB pitcher, World Series champion and bestselling author, said in a company press release.
Both locations will feature indoor and outdoor seating and the ability to accommodate takeout, dine-in and delivery options. Its open visibility gives customers easy access to views of the menu and ready-to-serve ingredients.
Founded in 2018, Koibito's menu is influenced by traditional Hawaiian and Japanese flavors and ingredients. Koibito, which means "love" in Japanese, strives to provide customers with whole foods that are good for them and taste good, too, Stottlemyre said.
