Lime Fresh Mexican Grill relaunches franchise program

Lime Fresh Mexican Grill, a fast casual brand with roots in South Beach, has relaunched its franchise program with a "Lime 2.0" model aimed at nationwide expansion. The company, known for its made-in-house Mexican food, is seeking franchisees to help bring its bar-forward concept and updated menu to new markets.

Lime Fresh Mexican Grill began in 2004 and has since grown to 10 locations across Florida. The company's strategy will focus on aggressive growth in the Southeast, with plans to expand to other states.

Patrick Fore, the CEO of Lime Fresh Mexican Grill, said the Lime 2.0 model was built on the brand's original foundation.

"We've elevated what guests already love — vibrant Miami energy, fresh-made food and a heart for hospitality — with an enhanced bar program, refreshed interiors and a scalable model," Fore said in a company press release.

The concept features a bar-forward layout with handcrafted cocktails, fresh-squeezed margaritas, beer and wine. The interiors of the new locations will incorporate eco-conscious materials, mood-driven lighting and black-and-white photos of Miami street culture. The company is actively targeting markets in South and Central Florida, as well as the Gulf Coast region. It is offering incentives and support to military veterans and multi-unit franchisees.

In early 2025, Lime Fresh rolled out 12 items, including the Mahi Mahi Tacos. The menu also includes the brand's first-ever pizza category with stone-fired flatbreads and a co-branded Tabañero hot sauce bar.

The relaunch follows a period of growth for the company, including a concession stand at Amerant Bank Arena, home of the Florida Panthers. The brand has also received several awards, including "Best Fast Casual" by Aventura Magazine and "Best Mexican" by The Guide to Florida's Best of Florida 2025.

"Whether serving guests at a major arena or a bustling neighborhood, people come to LIME for its fun energy, welcoming atmosphere and craveworthy flavors," Fore said. "Territories are moving quickly as we expand beyond Florida into the Southeast — and the window to secure prime locations is now."

Lime Fresh Mexican Grill has been backed by EverFresh Endeavors since 2016 and offers support to franchisees from real estate selection to marketing.
