Guaca Go unveils 'Florida Fresh Mex' menu

Guaca Go, founded in South Florida, has launched a "Florida Fresh Mex" menu, a culinary refresh aimed at cementing its regional identity and elevating its offerings with brighter, cleaner, and more tropical flavors.

The brand, known for its house-made guacamole and customizable bowls since 2017, said the updated menu expands its selection of chef-inspired bowls, salads, burritos and wraps while maintaining its focus on fresh preparation and clean ingredients.

"This menu reflects who we are and where we're from," Carson Bennett, Guaca Go co-founder, said in a company press release. "Florida Fresh Mex is our interpretation of fast-casual Mexican — brighter, lighter, and rooted in South Florida's coastal energy. We introduced new flavors and combinations that feel distinctly local."

The lineup is designed to capture the "spirit of Florida," according to Co-Founder Amber Benjamin.

A centerpiece of the launch is the enhanced Build Your Own platform, which features four bases, including a Citrus Kale Blend, four signature guacamoles and six proteins such as house-marinated chicken, pork carnitas and the new Hot Honey Chicken.

Signature items include the Florida Bowl, which features Southwest Guac, pineapple salsa and a cilantro lime sauce. The menu also introduces expanded salads, such as the Citrus Kale Crunch and an Avocado Caesar.

"The response so far — people saying, 'This tastes like Florida' — is exactly what we hoped for," Benjamin said.

Guaca Go emphasized that the "Florida Fresh Mex" concept incorporates more fruits and vegetables and is built on better-for-you ingredients, with options for vegan, gluten-free and seed-oil-free diners.

Lighter options like Lettuce Tacos, Avocado Toast and Snack Packs are also available for grab-and-go convenience. Prices range from $7.35 for Avocado Toast to $12.75 for the Florida Bowl.

The menu refresh comes as Guaca Go, which operates locations in West Palm Beach and Delray Beach, prepares for expansion. The brand is exploring a new location in Boynton Beach and plans to open its first franchise location in Tequesta in early 2026.
