Garbanzo going back to school at Minnesota State

Garbanzo Mediterranean Fresh opened its first Minnesota restaurant this week in the Centennial Student Union on the Minnesota State University, Mankato campus.

"We are excited to welcome everyone back to campus with a brand new dining option that's healthy and delicious," General Manager Kari Doffing, said in a press release. "At Garbanzo, we serve up love in every pita so our guests can feel brighter on the inside. We only use fresh, authentic ingredients and Old World recipes, which is why every dish we serve is so flavorful. We've assembled a great team and we're ready to become an integral part of Minnesota State's campus."

Mankato's Garbanzo is celebrating its grand opening on Sept. 6, with a ribbon-cutting ceremony hosted by the Mankato Chamber of Commerce, MSU President Richard Davenport and other university officials, according to the release. The Maverick 'Machine' pep-band and MSU's mascot, Stomper, will be on-hand to kick off the festivities. During the celebration, Garbanzo will hand out samplings and guests will have the opportunity to win prizes. 

"We're beginning to see a definite shift from Mexican to Mediterranean, and a transition from sandwiches to shawarmas," said James Park, CEO of the Denver-based chain, in the release. "Mediterranean flavors have survived the test of time and now it's become the food trend of the future."

Garbanzo Mediterranean Fresh is headquartered in Colorado with 23 locations nationwide.
