Fox Restaurants opens digital-only pizza, chicken concept

Fox Restaurant Concepts is opening Fly Bye, a digital-only restaurant serving Detroit-style square pan pizza and chicken, next week in central Phoenix.

"Fly Bye is both designed to conveniently provide the same high-quality food in a contactless way," Sam Fox, founder of Fox Restaurant Concepts, said in a company press release. "These are new methods of service that will be integral moving forward in 2021, and we're proud to be a brand that is ever-evolving and open to variation."

Fly Bye serves buttermilk-dipped, hand-breaded chicken tenders tossed in its spicy buffalo or the "Poppin Asian" sauce along with nine other dips. Wings and mozzarella sticks are also on the menu.

The Detroit-style pan pizza, however, has been been Fox's labor of love for quite some time.

"We spent a lot of time getting the dough just right," he said. "When you bite into this pizza the crust is airy, the center is cheesy, and the edges are perfectly crunchy. And then the toppings…you need to get those just right too, like those quintessential pepperoni cups that crisp up in the oven. It is so damn good; you've just got to try it and see for yourself."

Fox opened his first concept, Wildflower American Cuisine, in 1998 in Tucson and has since dozens of concepts including True Food Kitchen, North Italia, Blanco Tacos + Tequila and Flower Child.
