Fajita Pete's donates $20K to celebrate 20th restaurant

Fajita Pete's Tex-Mex fajita restaurant is celebrating the opening of its 20th restaurant in Overland Park, Kansas. The Overland Park location is owned by franchisee Scott Keen and is the first restaurant outside the brand's home state of Texas, according to a press release.

In celebration of the opening brand Founder Pedro "Pete" Mora pledged a $20,000 donation to local charitable organizations including Children's Mercy in Kansas City, Kansas, and the Cizik School of Nursing at UT Health in Houston.

"Giving back to our communities is in our DNA," Mora said in the release. "Our growth over the last 24 months is because of our communities, and this pledge is just a small token of our appreciation to show that we care."

Fajita Pete's was founded in Houston in 2008 and plans to open 12 locations in 2021, with agreements in place to open 30 restaurants in Texas, Kansas and Colorado within the next two years. The company is also looking into development deals in Oklahoma, Colorado, Arkansas, Arizona, Mississippi, Alabama and New Mexico.

"Our efficient business model, which centers on a small footprint, an efficient menu with just 14 items and a focus on off-premise dining, offers lower startup, operating and overhead costs than most restaurant franchising opportunities," Mora said in the release. "We've honed this concept for over a decade and know it works. "
