Einstein Bros. going south

Einstein Bros. Bagels is expanding further into the south, opening the first of six units in Chattanooga, Tenn., by September, according to the Chattanooga Free Press. Eventually, stores will also open in Hixson and Cleveland, Tenn., and then in North Georgia, too.

"Einstein Bros. Bagels has been a pioneer in healthy, quick breakfast and lunch," Cleveland Developer Rob Renner said in the story. "With Chattanooga being a health-conscious city, I think it will work well."

Einstein Bros. Bagels has about 600 stores in 40 states.

Renner, who will spend about $1.2 million to build a 2,200-square-foot, stand-alone unit with a drive-thru and 31 parking spaces, will turn over the day-to-day operations to operating partner Bob Cox, who owns Cox Hospitality Services.

Renner said he expects to have six locations open within five years, spending about $7 million and hiring about 150 people.
