Chili Shack, a Denver-based restaurant chain serving Mexican-American fare smothered in signature green chile, has launched a national franchise opportunity, with plans to open up to 100 locations across the United States in the coming years.
The expansion marks the brand's first major move outside of its home state, where it operates six corporate-owned restaurants. A seventh corporate location is slated to open in Las Vegas on Oct. 25, establishing the company's first foothold outside of the Denver metropolitan area.
Chili Shack's growth strategy will focus on both single- and multi-unit franchise agreements, initially targeting markets in parts of Colorado, Arizona, California, Florida, Nevada and New Mexico.

Olivas founded Chili Shack in 2020 as a tribute to his family's culinary roots, using profits from a successful landscaping business to open the first location in Lakewood, Colorado. His passion for cooking was sparked at a young age while working alongside his father, Ramon Olivas, a professional chef of more than 20 years.
The menu has since drawn a devoted following for its customizable burritos, grilled tacos, quesadillas, enchilada plates and Southwest-inspired burgers. The core of the appeal is the chain's signature green chile, which is used to bring a balance of heat, spice, and flavor to many of its offerings, Olivas said.
"Whether you're stopping in for breakfast, a late-night bite, or just craving something satisfying, we guarantee something for every appetite," he said, noting that most items cost between $10 and $16.
Chili Shack is seeking passionate entrepreneurs to join the brand's early growth.
The total investment to open a typical 2,400-square-foot restaurant ranges from $254,500 to $574,600, which includes a $65,000 franchise fee. Each location is designed to seat approximately 25 to 40 guests and employ up to 10 people.
Claudio Garcia, Chili Shack's chief technology officer and brand spokesperson, said the company's business model was "designed for growth."
