Creole fast casual concept opens in Chicago

Baton Rouge native Chef Sahil Singh and Chef Hiran Patel have partnered to open a Louisiana-style fast casual joint in the heart of Chicago. Lafayette, a 130-square-foot Creole-Cajun shabby shack, dishing out 100-year-old recipes from Singh's family recipe book, opened last week in the city's French Market, according to a company press release.

Guests can find Singh and Patel slinging street food and dishes, including po'boys with debris gravy all topped with Creole slaw, Crawfish Pie, Confit Pork Belly and Chicken Andouille Gumbos, Ratatouille Creole and Shrimp Étouffée, slow-cooked and served over rice. All of Lafayette's deli meats will be roasted in-house daily as well as slaws and sauces made on-premise, according to the release.

Beginning this winter, guests can continue their journey down Bourbon Street as Lafayette adds Fried Oyster and Shrimp Po'boys and House Made Boudin Sausage.

During the morning rush hour, diners can line up for the Grits Station and top their concoctions with various toppings. Breakfast-goers and evening diners can opt for freshly fried Beignets topped with a light dusting of sweet powdered sugar along with the French Market's Cafe du Monde's chicory roasted coffee. Guests may also order one of two homemade desserts including Bread Pudding and Pecan Pie, according to the company press release.
