Corner Bakery eyes Seattle and Vegas for expansion

Corner Bakery Café has signed two multiunit development agreements with California-based businessman Anil Yadav, CEO of JIB Management, who plans to open 16 cafes in Seattle and seven in Las Vegas throughout the next seven years.

According to a news release, Yadav is the largest Jack in the Box franchisee in the U.S., as well as the largest Denny's franchisee in California.

"While looking for a brand that is relevant in today's market, we came across Corner Bakery Cafe and knew we had to be a part of it," Yadav said. "The brand has a lot of promise for the future and is in the right segment — fast casual."

Last month, the company announced plans to open 18 restaurants in Kentucky and Tennessee, as well as plans for 17 cafes in the Orlando, Fla., area, bringing total development commitments to more than 350 locations.
