Scottsdale, Arizona, is now home to a fast casual concept serving ramen, thanks to a concept created by Aline Architecture Concepts and Born and Raised Hospitality, the restaurant group behind Phoenix-based restaurants Clever Koi, Across the Pond and Fellow Osteria. Clever Ramen, 1455 N. Scottsdale Road, features customized ramen noodle bowls, steamed bao buns and seasoned fries, according to a company press release.
Born and Raised Hospitality founders Joshua James and Nick Campisanos, who wanted to simplify the traditional ramen restaurant, tapped Aline Architecture Concepts Principal Brian Laubenthal to design a space that used modern technology while giving the space a warm and natural feel. The restaurant, which features a curved plywood ceiling and wall, was created in collaboration with the firm's millwork partner, Lion Craft, using 3D parametric modeling software to give the ceiling and walls the abstract shape of ramen.
"We developed the curved plywood ceiling and wall using a parametric software that allows us to control the shapes," Laubenthal said in the release. "From the software we directly send the parameters to the CNC machine for accurate cuts and a fast turnaround."
Architects often worry that new tech in restaurant design can give a restaurant a cold and robotic vibe, but the companies challenged themselves to build a cutting edge modern restaurant with a vibrant character, Laubenthal said.
"We really wanted to design a restaurant using modern technology and not lose the authenticity and character that makes our projects unique," he said. "I would say we succeeded in designing a restaurant with a unique charm."
Clever Ramen is open for lunch and dinner.
