Café Rio, a Mexican fast casual chain based in Salt Lake City, is in the process of interviewing banks ahead of an initial public offering of shares, according to a Wall Street Journal blog.
Café Rio, which owns and operates 66 restaurants in 11 U.S. states, and was founded in 1997, is now owned by former Burger King Corp. president and Taco Bell chief operating officer Bob Nilsen, who now serves as the chain's chairman.
