Bubbakoo’s opening second Kentucky location

Bubbakoo's Burritos, a build-your-own-burrito concept, is opening this week in St. Matthews, Kentucky, at 4212 Shelbyville Road.

"We're so excited to open our second location in Kentucky," Paresh Patel, franchise owner, said in a company press release.

Founded in 2008 in Point Pleasant, New Jersey, by industry veterans Bill Hart and Paul Altero, Bubbakoo's Burritos is dedicated to getting involved in the communities surrounding its 53 locations, according to the release. The team, for example, launched a program for area schools called the "Read It To Eat It Program" where students can read five books to receive a free student meal.

The chain has signed deals to develop 100 locations.
