Brixx Wood Fired Pizza has opened in three new markets in seven weeks.

Brixx Wood Fired Pizza has opened in three new markets in seven weeks, including Fayetteville, North Carolina; Virginia Beach, Virginia; and Denver, Colorado. All three restaurants are off to strong starts, already matching weekly sales of established Brixx outlets, according to a company press release.

Due to the success of the Brixx location, expansion plans in Virginia Beach and Denver are underway. Denver restaurateurs, Trey and Angela Woessner, who own the Denver Brixx, plan to open a second location in Denver later this year. GKTH Enterprises, owners of Brixx in Virginia Beach, will add a second Brixx in neighboring Chesapeake, Virginia, later this summer.

"From the pace of our expansion to the quality of the franchise operators joining us, this year is poised to be the best in our history," said Neil Newcomb, principal of Brixx Franchise Systems. "We're entering at least two more new markets this year as well — Jacksonville, Florida, and Cincinnati. The growth has been exciting and gratifying."

Brixx specializes in pizza topped with an array of fresh ingredients and cooked in a wood-burning oven to infuse them with the natural flavors of the wood. The menu also features salads, pastas and sandwiches complemented by 24 craft beers on tap, 14 wines by the glass and cocktails, the release stated.

"The fresh menu and beverage program at Brixx has really filled a niche in Virginia Beach. The concept has taken off faster than we expected," said Greg Knox of GKTH Enterprises. "Our guests have responded to our fine dining approach to casual food. We're grateful to them for making Brixx one of their favorites so quickly."

The traditional and whole wheat doughs at Brixx are made with turbinado sugar and are 100-percent vegan. Vegan cheese is available at no extra cost. The restaurant also carries gluten-free dough and gluten-free bottled beer.

"One of the selling points for us was the appeal Brixx has to a wide array of palates and dietary needs, including vegetarians and vegans. Along with the craft beer selection and the commitment to fresh ingredients, that's already been critical to our success in Denver," said Angela Woessner.
