Biju's Little Curry CEO featured in FYI TV series, 'Scraps'

The next episode of "Scraps," a culinary series produced by journalist Katie Couric, will feature Biju Thomas, the founder of Denver's Biju's Little Curry Shop. During the June 25 episode, Thomas visits local farmers markets with the show's star, Sur La table chef Joel Gamoran. The two spend the day looking for out-of-the-box ingredients that Gamoran will later use to build a full menu, according to a company press release.

"It's common for people to throw out food items such as banana peels, shrimp shells and chicken bones when cooking," said Thomas. "What many people don't realize is that you can actually use those ingredients to create some delicious meals. I'm really looking forward to showing viewers how wonderful Denver is and to share my knowledge of cooking with food scraps in order to advance this unique cooking movement."

The series follows Gamoran as he travels to 10 cities across the U.S. creating feasts using food waste and scraps, according to the release. Gamoran has less than a day to source ingredients, build a full menu and create a meal in his 1963 Volkswagen bus, which doubles as a mobile kitchen.

"Scraps" airs at 8:30 p.m. MST on Sundays on the FYI Network.

Thomas was named to this year's list of Fast Casual Top 25 executives.
