Because "cowboys" eat salads, too

Dallas-based Cowboy Chicken is celebrating  National Salad Month by putting a favorite former LTO on the menu permanently, a news release said. 

"Our guests kept asking us when we were going to bring back the Monterey, so we've added it to our regular menu on a permanent basis," Cowboy Chicken CEO Sean Kennedy, said in a news release. "We take great pride in the fact that our salads pack just as much taste and Texas-sized personality as anything on our menu. They're delicious, filling and filled with the freshest healthy ingredients, made in-house with the same care and attention as our hormone-free, all-natural rotisserie chicken."

The chain's rendition of the Monterey features rotisserie-roasted chicken and Monterey Jack cheese, along with toasted cheese crisps and chicken "cracklins" with chili lime dressing on greens. It is one of an assortment of salads available, including:  

  • Southwest chicken salad with chicken, black beans, corn, red onions, shredded cheese and Texas ranch dressing.
  • West Texas Caesar with chicken, romaine, toasted cheese crisps, tortilla strips and Caesar dressing topped with pico de gallo. 
  • Tangy tomato & cucumber salad with tomatoes, cucumbers, celery, red onions and cilantro in a vinaigrette.
  • Garden salad with greens and chopped vegetables.

Cowboy Chicken was named No. 51 to this year's Fast Casual Top 100 Movers & Shakers.
