Arras has nearly 25 years of experience in the hospitality industry, and most recently served as President and CEO of Shoney's Restaurants. Prior to that, he served as President and COO of Cracker Barrel Old Country Store. Arras started his career with Perkins Family Restaurants in 1979 as a management trainee. After being promoted through the operations department, he became President and COO in 1988 and remained there until 1998. Arras has also worked with Atlanta Bread Company in the past in a consulting role and has a strong knowledge of the brand. "This is a terrific brand that has been well positioned," said Arras.
