Amy's Drive Thru, a vegetarian concept created by the founders of the packaged retail line, Amy's Kitchen, is opening its fourth location Thursday in Roseville, California, according to a company press release.
The company, however, plans to expand the concept over the next five years by 25 to 30 locations along the West Coast. Locations in Thousand Oaks and Aliso Viejo will be ready in 2022.
The restaurant, which serves organic, vegetarian versions of burgers, fries, shakes and salads, strives for zero waste with its menu, packaging and restaurant design, according to the release. In 2020, it became one of the first B Corp Certified fast-food restaurants, and food is served in compostable packaging.
The Roseville restaurant is outfitted with solar panels, a "living roof" to promote insulation, and electric vehicle charging stations.
