On Jan. 1, Rubio’s opened a new location in Vista, Calif. The location boasts a new interior look for the Carlsbad, Calif.-based chain that features a lighter color scheme and digital menu boards.
Once inside Rubio’s newly designed Vista, Calif.-based restaurant, guests can read about the history of the concept or they can review daily specials.
The new design features a digital menu board that also showcases images of select menu items. The menu boards were added to help prepare the company and its franchisees for the addition of nutritional content on menus.
The dining room in Rubio’s Vista, Calif., location also features a lighter color scheme, bar and banquette-style seating and an outdoor patio. Founder Ralph Rubio said the new colors lighten the overall look and feel.
The restaurant features an open kitchen design and a salsa bar - two characteristics of all Rubio’s restaurants. The facility also has incorporated environmentally friendly materials used for the countertops, lights and tables.
