Hobart has launched its Baxter Mini Rotating Rack Oven, which features the company's patented self-contained spherical cast steam system, with two steamer assemblies per oven.

Baxter's unique airflow system is part of Hobart's gas and electric rotating rack ovens. In the company's gas-fired equipment, hot air is distributed through an exclusive heat exchanger system. The process creates a consistent temperature throughput.
The Baxter Mini Rotating Rack Oven features a stand at the bottom to give operators the ability to proof baked items, or store items waiting to be cooked, prior to baking.
The Baxter also features a touchscreen control panel that enables the even cooking of breads, pastries, cookies, meats, and other items. The 'Quick Set' feature allows for the setting of up to 99 recipes, which can be recalled at the touch of a button.
The oven features a rotating interior rack, which provides an even bake without manual pan rotation.
In addition to time and temperature, the Baxter can be programmed to operate in English, Spanish or French. Other languages are being added as needed, said a company spokesperson.
