Oregon restaurants presented many delicious menu items at the Truitt Brothers Oregon in Chicago 2010 event at the National Restaurant Association Restaurant, Hotel-Motel Show. The Clyde Common restaurant was represented by executive chef Chris Diminno.
Executive chef Michael Thieme of Sweet Waters on the River prepared braised elk and lavender-sugared strawberries. The Pan Pacific Northwest cuisine focuses on North American game, Pacific seafood and local organic produce.
Sweet Waters on the River displayed its lavender-sugared strawberries made from fresh organic strawberries, black truffle cream and crisp vanilla bean triangles.
