Food Technical Consulting (FTC) provides international QSR/Fast Casual restaurant consulting in new product and menu innovation, food safety/QA/HACCP, continuous quality improvement, food cost reduction, equipment testing and certification, expert witness testimony, and business performance metrics and analytics.

The Food Innovation Institute, a FTC subsidiary, provides workshops, training, and education services in food innovation, food safety, mobile retail food vending (food trucks), and business intelligence analytics (finance, marketing, and operations). The innovation workshops are held at Johnson & Wales University in Denver, CO, and taught by leading industry experts and/or distinguished culinary chefs. Most classes qualify for RCA continuing recertification education contact hours.

Food Technical Consulting also has 7 years food and beverage IT systems software consulting in electronic specification management, manufacturing, and supply chain management with Fortune 100 and 500 restaurant industry suppliers – and represents a unique collection of skill sets, expertise, and experience in both restaurant operations and food processing. This blend of talents has enabled FTC to provide $35M in food cost savings to restaurant chains in the past 6 years. Our understanding of manufacturing processes, software systems, lean manufacturing, flow technology, supply chain distribution, and activity based costing enables us to bring significant savings to your store level food costs.

Dr. Darrel Suderman has 15 years executive restaurant experience at KFC, Boston Market, Church’s Chicken, Quiznos, Chick-fil-A, Captain D’s, and Wendy’s International. He also worked 3 years for a leading restaurant supplier, and 7 years in retail packaged goods. In addition, he has 6 years experience as VP/General Manager of two leading software integration and consulting companies. He is a regular featured speaker for many Information Technology webinars and annual software sales conventions for the food and beverage processing industry. Dr. Suderman has co-authored a food processing book, holds two U.S. patents, and written over 40 trade industry and peer reviewed research papers, white papers, and trade articles.

Food Technical Consulting staff includes food technologists with B.S., M.S., and PhD degrees, former restaurant CEO and COO, culinary and Certified Master Chefs, and leading business performance financial analysts.
