Denver chef and foodie, Kevin Morrison, has announced the formation of a new Mexican restaurant concept, Pinche Tacos. Morrison also is the co-founder of Denver-based Spicy Pickle, and has left his position as chief culinary officer and director of baking in order to launch his latest endeavor.
"After surviving cancer twice in the past three years, I have re-evaluated my life. I want to get back to my passion of cooking and creating new restaurant concepts, re-connecting with the Denver culinary community, sailing and spending time with my wife and family," Morrison said.  Pinche Tacos is one of the first in Denver to offer an original Mexican street fare menu to be served from taco wagons and carts around the city. The first cart location is scheduled to open Spring of 2010 on Denver's 16th Street Mall.
 
The menu will include vegetarian as well as pork, chicken and beef tacos with various combinations of spices and sauces, served on locally made corn tortillas. Every Friday, Pinche Tacos also will feature its specialty, Sonoran Hot Dogs, wrapped in mesquite smoked bacon and served with smashed pinto beans, chopped tomato, caramelized onion, cotija cheese, roasted tomatillo salsa, guajillo honey mayo, chipotle mustard and roasted jalapenos.
 
"Our intent is to offer our customers a real taste of Mexico at a low pricepoint using fresh, local ingredients in expressive, flavorful combinations," Morrison said.
 
Further pushing this latest culinary trend in street fare food carts, Morrison also is organizing Eat the Street, a group of independent restaurants and chefs operating mobile food restaurants.    "Eat the Street's goal is to bring culinary diversity to Denver and provide an alternative method for upcoming restaurateurs from the traditional brick and mortar restaurants," Morrison said. "Street fare is rapidly becoming popular in cities across the nation from New York to L.A. to Portland. I hope to be one of the first to introduce this style of authentic eating, rich in ethnic tastes and flavor profiles, to Denver."
