Food Business Review: Panera Bread Co. has increased its fiscal second quarter 2008 earnings per diluted share target to 48 cents to 50 cents, up from its previously announced target of 40 cents to 44 cents per diluted share.
 
The company stated that the increase is driven by projected company-owned comparable bakery-cafe sales growth of 6.1 percent to 6.4 percent, and better than expected margin improvement on higher growth in gross profit per transaction.
