INVER GROVE HEIGHTS, Minn. — Baja Sol Restaurants has announced plans to open 12 new franchised locations in San Diego County and another 18 units in Orange County. The first restaurant will open in early 2009. Baja Sol Restaurants Group operates and franchises fast-casual and full-service Mexican restaurants under the Baja Sol brand name. The group is a Minnesota based-company that was acquired in 2006 by its largest franchisee group. The company has since expanded from 10 to 15 units, with five more scheduled to open by the end of 2008.
